Today we're diving back into our series dedicated to Chinese comfort food classics with a spicy "dan dan" peanut sauce variation on a classic Chinese wonton soup dumpling. Now, I will caution you all right now, if you're still here trying to trace the cultural roots of everything that's going into this dish at this point, just. Probably don't? This is a classic Chinese soup dumpling served with a Sichuan style dan dan sauce, made in an Americanized fashion using peanut butter, y'all. I know. That's a lot of things. 

For those unfamiliar, the wonton dumpling is pretty commonplace in Chinese restaurant cuisine, using an egg and flour based dumpling wrapper, filled with a ground pork filling and finally boiled for a soft and tender consistency. Though they are most typically served in a soup broth with noodles, today we’ll instead be pairing ours with a peanut butter based "dan dan" sauce topped with chili crisp oil to yield (in my opinion), the far superior way to eat a wonton. And yes, I will give further details to back this claim up.  Hope you try it.

 

Serves 2-3

INGREDIENTS

  • 50 wonton wrappers

INGREDIENTS (sauce)

  • 4 tbsp low sodium soy sauce (or 2 tbsp full sodium soy sauce)

  • 1 tbsp shaoxing wine

  • 1 tsp doubanjiang

  • 1 tbsp chili oil

  • 1 tbsp brown sugar

  • 1 tbsp rice vinegar

  • 1/2 tsp dark soy sauce

  • 3 tbsp peanut butter

INGREDIENTS (filling)

  • 4 cloves garlic

  • 1 inch (about 1 tbsp) ginger

  • 3-4 green onions

  • 1lb ground pork

  • 6oz cabbage

INGREDIENTS (marinade)

  • 4 tbsp low sodium soy sauce (or 2 tbsp full sodium soy sauce)

  • 1 tbsp shaoxing wine

  • 1 tsp dark soy sauce

  • 1 tsp oyster sauce

  • 1 tbsp spicy bean paste

  • 1/2 tsp white pepper

  • 1/2 tsp Chinese five spice

PREP

  • CRUSH and mince 4 cloves of garlic, set aside

  • MINCE ginger, set aside

  • SEPARATE the whites and greens of the green onions, then slice thinly, set aside

  • DICE 6oz cabbage, set aside

  • COMBINE ground pork, diced baby bok choy, garlic, ginger, and whites of green onions with all marinade ingredients and let marinate for 30 minutes

  • COMBINE all sauce ingredients, set aside

  • ADD 1 tbsp filling to each wonton wrapper, then wet the edges of the wrapper

  • FOLD the wrapper over into a rectangle, then hold the edges closed while pinching the corners together into a wonton shape

ON THE STOVE

  • BOIL a pot of water, then add the wonton and let boil for 4 minutes, or until all of the wonton begin to float

  • REMOVE the wonton, then heat a wok over medium heat, add the sauce and let simmer for 1-2 minutes

  • ADD the wontons and toss to combine

  • FINISH with greens of green onions and chili oil
