Hello hi everyone! This recipe is adding to our series on Hawaiian comfort food, reproducing the L&L Drive-Inn Loco Moco. We also did some fun with SPAM last month with a wok fried SPAM fried rice, and have some other new things coming up soon too! I had a lot of fun messing around with this classic mainly cause i grew up eating this stuff, and it's super nostalgic for me. Hope you give it a shot.

INGREDIENTS (gravy)
1/4 cup beef broth
2 tbsp worcestershire sauce
4 tbsp low sodium soy sauce (or 2 tbsp full sodium soy sauce)
2 tbsp butter
2 tbsp corn starch
INGREDIENTS
1lb 80/20 beef chuck
kosher salt
pepper
white rice
macaroni salad
2 eggs
vegetable oil
PREP
COMBINE all gravy ingredients, set aside
SEASON beef chuck with salt and pepper, then form into a patty with a divot in the middle
ON THE STOVE
HEAT a cast iron pan as hot as possible, then add 2 tbsp vegetable oil to coat
ADD the beef patty and sear for 2 minutes, then flip and cook to preferred doneness
REMOVE the patty and add the gravy mixture
REDUCE heat to low, then add 2 tbsp butter to the pan
STIR until a thick gravy forms, and remove from heat
FRY an egg over easy on a separate pan over medium heat.
SERVE with a side of rice, macaroni salad, and Hawaiian Sun
